Bakery Highlight: Caramel Pumpkin Spice Cupcakes

Fall is here! Halloween is officially over (finally...anyone else feel like it lasted forever this year?) so it's time to turn our focus to Thanksgiving!!!


Thanksgiving is my favorite time of the year because I love the food combinations so much...especially pumpkin. I LOVE pumpkin. Pumpkin with chocolate, with caramel, with cranberry, with nuts...pumpkin goes with a whole lot of flavors. Anyone else feel me on that?


Which was the big reason I REALLY wanted to add these Caramel Pumpkin Spice Cupcakes to my home bakery this year.


Growing up, my mom would make a pumpkin bundt cake every fall and lightly dust it with powdered sugar...it was so moist, so pumpkin-y, and it signaled the beginning of the holiday season to me.

Caramel Pumpkin Cupcakes

I adapted that recipe for you into a cupcake form, and topped it with a ring of white chocolate frosting to hold in the HUGE amount of homemade salted caramel I put on the top.


I used to hate caramel (I'd only ever had store bought), but then I learned to make it myself and WOW what a difference homemade is! When you slice into this cupcake, the frosting "dam" breaks and the caramel just oozes out in the best way to cover the cupcake so you get that ooey gooey caramel in every bite. Just be sure you are eating these with a fork!
