I love designing new cake flavor combos. And I've been wanting to add this one to my menu for a while! Every League City/Dickinson bakery needs a fresh lemon cake, am I right?
This one is a perfect cake for brunches, Mother's day, and other events where you are wanting something bright and fresh for your guests. Or you just love lemon and berries. No shame in that either!
Here's the details: Fresh lemon cake baked with lemon zest and berries. Call me a flavor snob, but I'm just not a fan of lemon extract, so all the lemon flavor comes from fresh lemons in this cake. #sorrynotsorry.
So, we have that light fluffy berry filled lemon cake, and then I made a homemade lemon curd to go in it. If you've never had lemon curd, first off, I'm sorry you've missed out your whole life. Lemon curd is amazing! Its a smooth, lemony filling that's made with lots of egg yolks and lemon juice, and it sort of soaks into the cake a bit to make it ultra moist.
To take it completely next level, I added fresh berries between the layers as well as on top, as you can see surrounding that gorgeous swirl on top. I covered the whole thing with lemon Swiss buttercream, and the Lemon Berry Dreams Cake was born!
